Apple and Cheese Pies

For the recipe you will need:
puff pastry – 250g
butter – 45g
apples (large, peeled, chopped) – 2 pcs.
Stilton cheese (softened) – 65g
walnuts (toasted and finely chopped) – 50g
parsley (chopped) – 1 tbsp.

parsley sprigs for garnish
To make Apple and Cheese Pies:

Heat up the oven to 200C. Place the dough on a lightly floured surface, roll out the dough into a 38cm x 24cm rectangle. Transfer to a ungreased baking sheet. Using a ruler, cut the dough lengthwise into strips measuring 38 x 4 cm. Place a second baking sheet on top of the first sheet of dough so that the dough is even.

Bake for 15-20 minutes until the dough is golden. Transfer the dough to a wire rack to cool.

Put the pan on medium heat, melt 15 g of butter in it. Add the apples, cover the pan with a lid and simmer for 10-15 minutes until the apples are soft.

Remove from heat and mash with a wooden spoon. In a small bowl, mix the cheese with the remaining 30g butter and mix well. Добавьте петрушку и рубленые walnuts.

Spread cheese mixture on 2 strips of pastry. Spread the apple mixture on the other 2 strips of dough. Place the apple dough on top of the cheese dough. Top with the remaining dough strips. Trim the edges of the strips with a knife. Cut each strip crosswise into 2cm wide pieces. Garnish with apples, walnuts and parsley. Serve at room temperature.
