Pies with potatoes, onions and mushrooms

For the recipe you will need:
for the test:

flour – 500g
water (warm) – 1 cup
yeast (dry) – 1 tsp
vegetable oil – 1/2 cup
salt – 1/2 tsp
granulated sugar – 1 tbsp.
For filling:

potatoes – 3 pcs.
onion – 2 pcs.
dried mushrooms (preferably porcini) – 5-6 pcs.
vegetable oil – 2 tbsp.
salt, pepper – to taste
strong tea (for greasing pies before baking) – 2 tbsp.
vegetable oil (after baking) – 1 tbsp.
To cook Patties with potatoes, onions and mushrooms, you need:

Knead the lean yeast dough: dilute the yeast, salt and sugar in a small amount of warm water, knead the dough from the remaining water and flour, add the dissolved yeast, knead well and finally pour in the vegetable oil. Cover with plastic wrap and place in a warm place to ferment. Do two rounds. Lubricate the table (oilcloth) with vegetable oil and divide the dough into pieces of 40 grams each. Let it come up and flatten them with your hands into cakes. Put in the middle of each stuffing and pinch. Place seam side down on a greased baking sheet and let rise 10-15 minutes. Lubricate the top with strong tea and bake at 180C until cooked. When baked, in order for the top crust to become softer, grease it with vegetable oil.

Preparation of the filling: finely chop the onion and fry in vegetable oil until tender. Finely chop the boiled dried mushrooms and mix with onions. Prepare a thick puree from boiled potatoes and mushroom broth. Pair it with onions and mushrooms. Salt and pepper to your liking.
