Eggs with green mayonnaise

For the recipe you will need:
egg – 6 pcs.
green salad – 100g
mayonnaise – 125g
cream – 2 tbsp. spoons
parsley – 1 bunch
for mayonnaise – an egg – 2 pcs.
olive (or corn) refined oil – 1 cup
lemon juice – 2 tbsp. spoons
salt – 1 teaspoon

red pepper – a pinch
To cook Eggs with green mayonnaise, you need:

Hard-boiled eggs are cut into quarters. Green lettuce is finely cut or passed through a meat grinder, then rubbed with cream and mixed with mayonnaise. Eggs are laid out on a dish, poured with green mayonnaise and decorated with herbs. Adhering to the recipe to the end, mayonnaise for this dish is prepared as follows: the yolk is separated from the protein, and poured into a porcelain bowl with a round bottom, mustard, pepper and salt are added in succession and stirred well with a spoon (preferably wooden). Then, whisking continuously with a whisk, add 1-2 drops of lemon juice and almost drop by drop 14 cups of vegetable oil until the sauce begins to thicken and turn white. From this moment, without stopping whisking, add 1-2 more drops of lemon juice and the remaining oil, which should be poured in a little faster than at the beginning. If the sauce is too thin, you can add salt to thicken it. It is quite difficult to prepare the sauce by hand, so you can resort to using an electric mixer.
