Mayonnaise

For the recipe you will need:
egg – 2 pcs.
olive (or corn) refined oil – 1 cup
lemon juice – 2 tbsp. spoons
salt – 1 teaspoon

To make Mayonnaise you need:

Make sure that all products are at approximately the same temperature! The yolk is separated from the protein, immediately poured into a porcelain bowl with a round bottom, mustard, pepper and salt are added in succession and stirred well with a spoon (preferably a wooden one).

Then, whisking continuously with a whisk, add 1-2 drops of lemon juice and almost drop by drop 1/4 cup of vegetable oil until the sauce begins to thicken and turn white. From this moment, without stopping whisking, add 1-2 more drops of lemon juice and the remaining oil, which should be poured in a little faster than at the beginning.

If the sauce is too thin, you can add salt to thicken it. It is quite difficult to prepare the sauce by hand, so you can resort to using an electric mixer.
