“Mint toast with green peas”

Cooking time: 20 minutes

Ingredients:

➖ baguette or ciabatta (Italian bread)
➖ olive oil – 2 tbsp.
➖ green peas, fresh or frozen – 225 g
➖ balsamic vinegar – 1 tsp
➖ hard cheese – 60 g
➖ mint leaves – 1 bunch
➖ salt – to taste
➖ ground red pepper – to taste

Recipe “Mint croutons with green peas”:

1. Cut the ciabatta or baguette into slices with a sharp knife and fry them on both sides for 1 tbsp. a spoonful of olive oil.
2. If you are using frozen green peas, thaw them first: pour cold water for 5-8 minutes, and then drain in a colander.
3. Place defrosted green peas along with mint leaves and cheese in a blender bowl, add 1 tbsp. a spoonful of olive oil, balsamic vinegar and grind to your liking. Such a mixture of a rather large texture is obtained very tasty. Salt and pepper to taste.
4. Put the resulting mass on the croutons and serve. If desired, you can decorate the croutons by sprinkling them lightly with grated cheese.
