Oven-baked cheesecakes

Usually cheesecakes are formed in the form of pancakes and fried in vegetable oil.
And I want to offer another option, dietary. And at the same time, we will not fry cheesecakes, but bake them in the oven … and to make it even more interesting, they will look like cupcakes.
It seems that the recipe is not very different – the components are the most standard: cottage cheese, eggs, sugar, flour … but it turns out more interesting – a delicate, airy, juicy structure and a beautiful shape. In addition, without excess oil, i.e. low-calorie and, importantly, frees from long standing at the stove.

Well, let’s get started?

Raisins should be poured with boiling water and allowed to stand for some time so that it softens a little. Then drain the water, and dry the raisins with a clean towel.

Separate the eggs carefully into whites and yolks.
Beat egg whites with a pinch of salt into a fairly dense foam, as they say, until strong peaks. As an indicator, with the right “overrun” – turning the bowl over, the protein foam does not tend to fall out (slip) out of it.
Cottage cheese, if it has a rather large grain size, must be rubbed through a strainer – this is necessary for a more “smooth” dough consistency.
Then beat it well with sugar, vanilla sugar and yolks.

When the curd mass becomes homogeneous, add the sifted flour and raisins. Again, mix everything well.

And now it’s time to introduce whipped egg whites. We mix them with a silicone spatula with gentle movements from top to bottom, trying to keep the airiness of the dough as much as possible. This is all because we do not use any additional baking powder to raise the dough, but the bubbles of whipped proteins will perform this function.

Divide the dough into molds. You can also use simple muffin molds – in this case, grease the walls with a small amount of vegetable oil. But the most convenient way, as it turned out, is to take silicone molds – it is absolutely easy to extract baking from them!

We bake cheesecakes in oven at 180 degrees for about 30 minutes. Do not try to take them out immediately after the time has elapsed – let them “rest” a little in the oven, 10 minutes is enough. Why is it necessary? All so that the cheesecakes do not settle ahead of time, as if fixing their shape … and they will cool down a little – it’s easier to take them out.

Until the cheesecakes have cooled down completely, serve with whatever you like, for example, with sour cream, berry sauce or simply sprinkled with powdered sugar.
