Yeast pies with cabbage

I want to offer a recipe for unusually tasty, lush, airy yeast pies with cabbage, the dough for which is prepared in just 5 minutes. I love this dough very much, and the filling can be made different each time. Try it!

To prepare yeast pies with cabbage you will need:
For test:
flour (highest grade) – 4-4.5 glasses (glass – 250 ml);
sugar – 2 tbsp. l.;
соль – 0,5 ч. l.;
milk – 500 ml;
vegetable oil – 2 tbsp. l.;
dry yeast – 11 g.
For filling:
white cabbage – 500 g;
onion – 1 pc.;
carrots – 1 pc.;
tomato paste – 1 tbsp. l.;
salt – to taste;
сахар – 1 ч. l.;
ground black pepper, spices – to taste;
vegetable oil – 3-4 tbsp. l.;
garlic – 1 clove;
boiled water – 50-70 ml;
raw egg yolk – for greasing pies.

Sift flour into a deep bowl. Pour salt, sugar, pour in vegetable oil.

Add yeast and milk (milk for this dough can be used both warm and cold).

Knead the dough. It will turn out soft, do not add more flour. Fold the dough into a plastic bag, tie off, leaving a little space for approach. Place the bag with the dough in the refrigerator for 2 hours.

While the dough is in the refrigerator, prepare the filling. Chop the cabbage (not large), mix with carrots, grated on a coarse grater. Salt and crush with your hands. Pour vegetable oil into a saucepan, put on fire. Lay out the cabbage. Saute a little until the cabbage softens (5-7 minutes). Add finely chopped onion.

Mix well. Fry over low heat for another 5 minutes. Then add tomato paste, spices, sugar, salt, pepper, pour in water. Simmer the cabbage under a closed lid, stirring occasionally for 10-15 minutes. At the end, add chopped garlic, mix and turn off the gas. Let the cabbage cool.

Take the dough out of the refrigerator. It should double in size. Turn the dough out of the bag onto a lightly floured work surface. Slightly knead. Divide into pieces weighing about 40-50 grams. Roll each piece into a ball, flatten and roll a little into a cake. Put a tablespoon of cabbage in the middle.

Shape into patties, pinching the edges well. Lubricate the form or baking sheet with a little vegetable oil, place the yeast pies with cabbage. Lubricate with beaten yolk.

Bake in an oven preheated to 180 degrees for 20-25 minutes (up to ruddy crust).

Transfer the finished pies to a large dish lined with a napkin, cover with a clean towel and let cool. As a rule, it doesn’t get to cool down for me – delicious yeast pies with cabbage disappear at an incredible speed!
