Vareniki Top 5 Recipes

1) Vareniki with apples

INGREDIENTS:
● flour 3 cups
● water 3/4 cup
● eggs 2 pcs.
● fresh apples 800 g
● sugar 1/2 cup
● cinnamon to taste

COOKING:
1. Knead the dough and roll it out not too thin on a floured surface.
2. Peel and cut ripe apples into strips. Sprinkle with sugar and let stand to drain excess juice. You can lightly sprinkle apples with ground cinnamon.
3. Put the filling on the circles of dough and fasten the edges. Boil in salted water for 1 minute after the dumplings float to the surface. Carefully remove the finished dumplings from boiling water so as not to break the shell.
4. Serve with sugar or honey.

2) Vareniki with cherries in a double boiler

INGREDIENTS:
kefir 1 cup
● flour 2.5 cups
● salt 1/4 tsp.
● soda 1/3 tsp.
● cherry 300 g
● sugar to taste

COOKING:
1. Sift flour together with salt and soda into a bowl. Make a well in the center and gradually pour in the kefir. Knead a soft, non-sticky dough. Cover with a kitchen towel and let stand 20 minutes.
2. Wash cherries and remove pits. Pour in sugar and let stand until the juice stands out (it must be drained).
3. Roll out the dough on a floured table. Cut out circles with a glass.
4. Put the filling in the center of each piece of dough. Pinch the edges.
5. Steam for 7-8 minutes. Serve ready dumplings with sour cream and sugar.

3) Vareniki with cabbage

INGREDIENTS:
● flour 200 g
● salt
● sauerkraut 500 g
● butter 50 g
● eggs 1 pc.
● water 60 ml
● bow 1-2 pcs.

COOKING:
Rinse cabbage in cold water and squeeze. Peel the onion. Finely chop the squeezed cabbage. Cut one onion into thin half rings and fry until golden brown in oil. Add cabbage and simmer over low heat, cover with a lid and stir occasionally until the color changes. Prepare the dough. Sift the flour into a bowl of a suitable size, add salt, water, beat in an egg, mix. Knead a cool, elastic dough, it should not stick to your hands. Cover with a towel and leave for 30 minutes.

Roll out the dough in a thin layer, cut into squares or cut round blanks using a glass. Put the cabbage in the middle of each workpiece and close up the edges. Boil water in a saucepan, salt and boil the dumplings until tender, about 8 – 10 minutes, after boiling. the rest cut the onion into small squares and fry in butter until golden brown. Arrange the finished dumplings on plates and drizzle with oil and fried onions. Or as an option – fried carrots.

4) Vareniki with cabbage and mushrooms

INGREDIENTS:
● sauerkraut 500 g
● dried mushrooms 100 g

● vegetable oil 4 tbsp.

● egg 1 pc.
● water 3/4 cup

COOKING:
Knead the dough. Rock. Squeeze circles with a glass. Put the filling in the middle. Tape the edges carefully. Boil in salted water. Wash mushrooms, pour cool water over, leave for an hour. Salt, add a couple of grains of allspice, black pepper, boil. Strain and cut.

Wash the cabbage, squeeze, finely chop. Mix with mushrooms. Finely chop the onion, fry. Mix everything and fry again. Salt, pepper. Fill dumplings with the finished stuffing and boil. Serve with sour cream.

5) Vareniki with potatoes and onions

INGREDIENTS:
● potatoes 700 g
● onion 1-2 pcs.
● milk 1 cup
● egg 1 pc.
● flour 2.5 cups
● butter 100 g
● vegetable oil 2 tbsp.
● ground pepper, salt to taste

COOKING:
1. Peel potatoes, cut into cubes, boil until tender in salted water.
2. Mix milk with egg and salt. Gradually add the sifted flour, knead the dough.
3. When the dough for dumplings becomes thick enough, transfer it to a floured table and knead with your hands, forming a ball.
4. Fry finely chopped onion in vegetable oil. The onion should turn golden brown.
5. Drain the water from the cooked potatoes. Add a piece of butter and mash into a puree. Add most of the fried onions, pepper the stuffing to taste.
6. Roll out a small piece of dough with your hands into a sausage with a diameter of several centimeters. Cut into pieces with a knife and roll in flour. Roll out pieces of dough thinly. Put the filling in the center of each circle. Seal the edges well.
7. Boil dumplings in boiling salted water for 5-6 minutes.
8. While dumplings are cooking, put the remaining fried onions in a deep bowl, adding pieces of butter. Remove the finished dumplings from the pan with a slotted spoon and send to a plate with butter and onion, mix.
