Potato dumplings with meat

Potato dumplings with meat is a famous, very tasty and hearty dish from Ukrainian cuisine. There are many recipes for dumplings, any filling is used – according to your taste. The size of dumplings can be from medium to quite large. Potato dumplings with meat are perfect for a family lunch or dinner.

Ingredients:

For test:
potatoes – 400 g;
flour – 300-350 g;
semolina – 2 tbsp. l.;
chicken egg – 1 pc.;
salt – to taste.

For filling:
chicken fillet – 250 g;
onion – 1 pc.;
salt, black ground pepper – to taste;
cold water – 30 ml;
sour cream – for serving;
fried onions or butter – for serving.

Cooking:

Peel potatoes, cut, pour water and put on fire. Bring to a boil, season with salt and simmer until tender. Drain water, mash potatoes. Let cool completely. Pour semolina into the cooled potatoes and add the egg. Mix. Pour in the sifted flour gradually.

Knead a soft dough that will be slightly sticky to your hands. Leave the dough to “rest” for 30 minutes. Cut the fillet and onion into small pieces. Grind in a blender or pass through a meat grinder. Salt and pepper, pour in cold water. Mix mince well. Dust your work surface and hands well with flour. Divide the dough into parts, from each – to form cakes. Place 1 tablespoon of prepared minced meat in the middle of the cake. Pinch carefully cakes in the form of bags.

Roll with your hands (without much pressure) koloboks. Boil water and salt. Put dumplings in boiling water and cook until they float to the surface. Then reduce the heat and cook for another 8-10 minutes.
Ready tender, delicious potato dumplings with meat served with sour cream and fried onions or butter. You can also sprinkle black pepper on top. Very tasty!
