Vegetable stew with new potatoes and zucchini

Vegetable stew is an easy-to-prepare and very relevant dish on the summer table. It will be appreciated by everyone who tries to eat right, because it is prepared from seasonal vegetables, which contain a large amount of useful substances and vitamins. And the stew itself is a very light dish in which you can combine a variety of vegetables.

Of course, not only young potatoes can be used for making stews. Optionally, you can add other vegetables: cabbage, sweet peppers, tomatoes, etc.

Ragout can be prepared only from vegetables or with the addition of meat. I wanted to make the dish more satisfying, so I cooked a vegetable stew with meat, I used lean veal. If you want to cook a stew without meat, then you can skip step 1 and immediately start stewing potatoes with vegetables, as described in step 4.

Ingredients for cooking vegetable stew from new potatoes and zucchini:

Young potatoes 4 pcs.
Zucchini 2 pcs.
Carrot 1 pc.
Onion 1 pc.
Salt, pepper or other spices – to taste
Bay leaf
Veal (beef, pork) 300 g
Vegetable oil ~100 ml
Greens
Recipe for vegetable stew of potatoes and zucchini:

1. Wash the meat, dry and cut into pieces. In a thick-walled dish, heat the vegetable oil, put the meat and fry for 5-7 minutes, stirring occasionally. Then add half a glass of water and simmer for 15 minutes with the lid closed.
2. While the meat is stewing, you can prepare the vegetables. They need to be washed and cleaned. Cut the potatoes into cubes or slices, I cut them not very finely.
3. Cut carrots and onions.
4. Put the potatoes, carrots and onions to the meat, mix and add hot water – enough so that it does not completely cover the vegetables and meat. Cover and simmer for 15-20 minutes, until the potatoes are almost done.
5. Wash the zucchini and cut into large slices. The larger the pieces, the better they will retain their shape during cooking. Add zucchini to the cauldron with the rest of the ingredients. Salt everything, mix, cover and simmer for another 8-10 minutes. At this point, you can also put a bay leaf.

7. Pepper the stew and add any spices to taste. Pour greens, mix and immediately turn off the fire. Cover with a lid and let stand for a while.
