Vegetable caviar with eggplant and tomatoes

Vegetable caviar is the most popular dish during the vegetable season. This dish is light and satisfying at the same time, it can be served both on its own and as a side dish to a meat dish!

Vegetable caviar can be cooked with zucchini, add basil and any greens.

Ingredients for cooking vegetable caviar:

Eggplant 4-5 pcs.
Carrot 1 pc.
Sweet pepper 2-3 pcs.
Hot pepper 1 pc.
Onion 4-5 pcs.
Tomatoes 7 pcs.
Garlic 4 cloves
Recipe for vegetable caviar with eggplant and tomatoes:

1. Prepare all vegetables, wash and dry them. Peel the eggplant and finely chop. Also peel and cut carrots, sweet and bitter peppers, onions.
2. Put the vegetables in a deep frying pan or cauldron, add 1/3 cup of water, salt and mix. Cover with a lid, after boiling, reduce the heat to medium and simmer for 10-15 minutes.
3. Finely chop the tomatoes, cut the garlic into slices or cubes and add to the vegetables, simmer for another 8-10 minutes. Vegetable caviar is ready!
