White and red wine sauce

For the recipe you will need:
wine – 30g
onion – 10g
broth – 100g
parsley-celery-champignons – 5g each
flour – 3g
butter – 10g
lemon juice – 5g
garnish – 100-150g
pepper
greens.
To prepare Sauce with white and red wine you need:

To prepare the sauce, finely chopped onions are sautéed in oil. Pour the light meat broth in which the meat was cooked, add the parsley roots, celery, fresh mushrooms cut into noodles and cook at a low boil in a sealed container for about an hour.

Then pour in white or red dry wine, salt, heat to a boil, add a mixture of dried wheat flour and butter in small pieces and, stirring, cook the sauce for 12-15 minutes.

After that, season the sauce to taste with lemon juice, white or red ground pepper and strain, while rubbing the onions and roots remaining on the sieve. Strained sauce, stirring, boil again.
