Zucchini rolls with fish salad

Salad with lightly salted fish wrapped in fried zucchini is a delicious and beautiful appetizer that will decorate everyday and holiday tables.

Ingredients :
zucchini or zucchini – 1 kg;
slightly salted salmon – 100 gr.;
boiled egg – 2 pcs.;
fresh cucumber – 120 gr. (one large);
boiled rice – 4 tbsp. spoons.;
parsley – 15 gr.;
sour cream or mayonnaise for dressing
salt, black ground pepper.
Cooking:
Zucchini should be taken medium-sized, even. Cut the zucchini into thin slices along the zucchini, lightly sprinkle with salt. Fry the zucchini plates in vegetable oil on both sides until golden brown. Squash plates should be laid out from the pan on a napkin to remove excess fat. Let the zucchini cool down.
Cut the salmon into thin strips, peel the cucumber and also cut into small pieces. Chop greens. Mix all the ingredients and salt and season with sour cream (salt 5 tablespoons of sour cream, add a little ground black pepper, 0.5 teaspoon of prepared mustard, a pinch of sugar and a dessert spoon of lemon juice) or mayonnaise.
After frying, the zucchini becomes soft and easy to roll into rolls. Put a tablespoon of lettuce on a squash plate and roll it up. We chip the roll with a toothpick or skewer. If you need it juicier, you can first grease the zucchini with sour cream, and then put the filling and wrap it.
Beautiful and delicious zucchini rolls with fish salad are ready!

From two medium zucchini (by weight 0.5 kg each), 16 rolls were obtained.
