Homemade Cheesecakes

Cheesecakes with cottage cheese are wonderful homemade pastries, familiar to us since childhood. I love that the dough for cheesecakes is rich and the filling is sweet. According to this recipe, curd cheesecakes are very tasty, lush and fragrant.

Ingredients:

For test:
1 egg;
2 tbsp. l. Sahara;
1/2 пакетика ванильного Sahara;

250 ml of milk;
500-550 g flour;
1 st. l. dry yeast;
80 g butter.

For filling:
500 g of cottage cheese;
2-3 tbsp. l. Sahara;
1 egg;
1/2 sachet of vanilla sugar.

For greasing cheesecakes:
1 egg;
1 st. l. milk.

Cooking:

Beat the egg with sugar, vanilla sugar and salt. Pour in warm milk, stir. Mix flour with dry yeast and, adding gradually, knead the dough into the egg-milk mixture, first with a whisk, then with your hands. Lastly, add the melted butter and knead it into the dough. The dough should be homogeneous and soft. Cover the bowl with the dough with cling film or a towel and put it in a warm place to rise for 1-1.5 hours.

The finished dough will increase significantly in volume. To prepare the filling, grind the cottage cheese with eggs, sugar and vanilla sugar. Shape the dough into small equal balls and place them on a greased baking sheet at a distance from each other. Leave for 20 minutes to rise.

Then push the middle of each ball of dough almost to the base. Put the curd filling into the resulting recesses. Lubricate all homemade cheesecakes with cottage cheese with a mixture of eggs and milk and leave for another 10 minutes. Then put in an oven preheated to 190 degrees and bake until golden brown, about 25 minutes. Transfer the finished curd cheesecakes from the baking sheet to the wire rack and cool. Homemade cheesecakes with cottage cheese, prepared according to this recipe, turned out to be very tasty, lush and fragrant!
