Cooked donuts with walnut-cherry stuffing

For the recipe you will need:
flour – 2 cups
butter – 60g
egg – 4 pcs.
egg (yolk) – 2 pcs.
water – 1 glass
cherry – 350g
powdered sugar – 200g
cocoa powder – 40g
walnut (ground) – 100g
cognac (or rum) – 50g
salt – 0.25 tsp
lard – 600g.
To prepare Custard donuts with walnut-cherry filling you need:

Add butter, salt, 20 g of powdered sugar to boiling water. Stirring constantly, gradually add flour and cook until the mass begins to lag behind the walls of the dish. Remove from heat and continue stirring to cool to 30C.

Whisk the eggs and yolks one at a time into the chilled mixture.

Mix chopped walnuts with rum or cognac. Stuff the pitted cherries with the nut mixture.

Divide the dough into small pieces, put a cherry with a nut filling in each piece and form round donuts.

Fry the donuts until tender in lard, then transfer the hot donuts to a paper towel to soak up the excess oil.
