Baking cakes with dry yeast in the oven

Today I want to share a recipe for making sweet pies with dry yeast in the oven. The pies are simply airy and disappear from the table in a matter of minutes. As a filling, you can use seasonal berries and fruits. I cooked with raspberries, cherries and apricots. From this amount of ingredients, 20 delicious pies come out.

To prepare sweet pies with dry yeast in the oven, you will need:
For test:
milk – 0.5 liters;
sugar – 3 tbsp. l.;
соль – 0,5 ч. l.;
dry yeast – 1 sachet (11 g);
egg – 1 pc.;
vanilla sugar – 1 sachet (10 g);
vegetable oil – 2 tbsp. l.;
flour – 1-1.2 kg;
egg white for greasing pies.
For filling:
fresh or frozen berries, fruits (I cooked with raspberries, apricots and cherries);
sugar – to taste.

To prepare the dough, pour yeast and 1 tablespoon of sugar into warm milk, mix and leave for 10 minutes so that the yeast activates and a fluffy cap appears. Then add the remaining 2 tablespoons of sugar, vanilla sugar, salt and beat in the egg, mix well with a whisk. Then pour in vegetable oil and mix well again. Pour the sifted flour in parts and knead a soft yeast dough that does not stick to your hands. Lubricate the bowl with vegetable oil and put the dough into it.

Cover the dough with a towel and leave in a warm place for 1 hour.

Then knead the dough and leave for another 30-40 minutes. The dough should become more elastic and double in size.

Prepare the ingredients for the filling. I made sweet pies with raspberries, apricots and cherries, I added 1 teaspoon of sugar to each pies. Since it’s summer now, my berries are fresh. But such pies can also be baked with frozen berries, for this they must be thawed at room temperature, and the excess liquid drained.

Wash the berries. Remove pits from apricots and cherries. Cut apricots into small pieces.

Divide the finished yeast dough into 20 equal parts. Roll each piece of dough into a small ball. Cover them with a towel and let them rest for 5 minutes.

Then flatten each ball with your palm to make a cake, stretch it a little. You can use a rolling pin and simply roll each ball into a cake. Put sugar and filling on each cake.

Seal the edges of each tortilla to form a patty. So blind everything pies.

Line a baking sheet with parchment paper and lay the patties seam side down. Cover them with a towel and let them sit for 10 minutes. Then brush them with whipped egg white.

Bake sweet pies in an oven preheated to 180 degrees until a beautiful ruddy color. Depending on your oven, the pies can take anywhere from 25 to 35 minutes to bake.

Butter pies with dry yeast, baked in the oven, are very tasty and airy. They need to be removed from the parchment immediately after baking so that they do not stick to the juice that stands out from them during the cooking process. When the pies have cooled down a bit, you can serve them on the table with a cup of aromatic tea or milk.
