Vareniki with cherries

I propose to make a delicious delicacy in the cherry season – dumplings. Yes, cooking will take time, but the result is worth it. I like the dough for dumplings on kefir – dumplings are lush and tender, so my grandmother always cooked the dough. To prepare dumplings with cherries, you can use not only fresh, but also frozen cherries. Thus, you can enjoy dumplings with cherries not only in summer, when the cherry season is in season, but also in winter.

If you can’t use all the prepared dough, you can freeze it and cook dumplings next time without making a new dough for them.

Dough Ingredients:

Kefir (or whey) 250 ml
Flour ~300 g
Soda 1/2 tsp
Salt 1/3 tsp
Filling Ingredients:

Cherry 400 g
Sugar
Recipe for making dumplings with cherries:

1. Rinse the cherries and remove the seeds from it. I do this with the handle of a teaspoon.

If there are a lot of wormy cherries, you can fill it with water for 20-25 minutes and let it stand – the worms will emerge.
2. Pour kefir into a deep bowl, add salt and a little flour, soda, mix. Gradually mixing in the flour with a spoon, knead the dough. Then put the dough on a floured table and continue to knead the dough with your hands, adding flour if necessary. The dough should be soft and elastic. It should not blur and stick to your hands.
3. Divide the finished dough for dumplings into several parts. Roll a tourniquet from each part and cut it into pieces. Make a round cake from each piece, flattening it with your hands.
4. Put a few cherries on each cake and sprinkle with sugar, blind the edges of the cake. Blind enough dumplings to fit in the pan in which they will be cooked. While these dumplings are cooking, you can sculpt the next batch.
5. Put the finished dumplings in boiling salted water, stir them so that they do not stick together, let it boil and turn down the fire. When the dumplings float to the top, cook them for another 1-2 minutes.
You can serve ready-made dumplings sprinkled with sugar, and whoever likes – with sour cream! Vareniki can also be made with raspberries, strawberries, apricots and other berries and fruits!
