Kefir dumplings with cabbage and potatoes

Vareniki is one of the traditional Ukrainian dishes, as well as one of my family’s favorite dishes. Dumplings on kefir and soda are lush and tender. This is how my grandmother cooked for all of us, grandchildren, when they came to her for the holidays, then my mother, now I cook dumplings this way. You can use any filling: mushrooms, cottage cheese, berries, etc. Today I propose to make dumplings with two types of filling: with potatoes and with cabbage.

From the indicated amount of ingredients, two large bowls of dumplings are obtained – one with dumplings with cabbage, the other with dumplings with potatoes.

Dough Ingredients:

Flour
Kefir 0.5 l
Soda 1 tsp
Salt 1 tsp
For the cabbage filling:

White cabbage 1 head
Onion 1 pc.
Vegetable oil
Salt
For the potato filling:

Potatoes 0.5 kg
Onion 1 pc.
Vegetable oil+сливочное
Salt
Recipe for dumplings:

1. Make the stuffing for dumplings with cabbage. Finely chop the onion. Finely chop the cabbage. In a cast-iron pan or cauldron, heat vegetable oil and put chopped cabbage, add half a glass of water, cover and simmer until the cabbage is soft. Then add the onion to the cabbage, salt to taste, mix and simmer everything together for another 10-15 minutes.
2. Make a filling for dumplings with potatoes. Finely chop the onion and fry in vegetable oil, add a piece of butter at the end. Boil potatoes, mash in a puree, salt. Add fried onion to potatoes.
3. Knead the dough. Gradually stir the sifted flour into kefir with a spoon or whisk. Add soda and salt to the still batter, continue kneading the dough until the dough stops sticking to your hands. Sprinkle the table with flour, put the dough on it and continue to knead with your hands. The dough should be elastic and soft.
4. Cut the finished dough into several pieces. Roll out each part in the form of a tourniquet and cut into small and even pieces. From each piece, make a cake and put the filling on it, carefully blind the edges, forming a dumpling.
4. Put a pot of water on the fire and, as soon as the water boils, you can lay and cook dumplings. Cooking time – about 5 minutes, depending on the size of the dumplings. If I make small dumplings (mostly with cottage cheese or potatoes), I cook for 3-4 minutes, medium ones – about 5 minutes, if I make dumplings with berries – I get them larger – I cook for 5-7 minutes.

I serve dumplings with cabbage with onions fried in sunflower oil.
