Mushroom patties.

Ingredients.

For potato dough.
● 5-7 medium potatoes;
● 1 egg;
● A pinch of salt, ground black pepper – to taste;
● 4 tablespoons flour + for rolling.

For the mushroom filling:
● 150 g of fresh champignons;
● 1 small onion;
● Salt, pepper;
● Sunflower oil for frying.

Cooking:

Wash the potatoes, peel and boil until soft in salted water; then we drain the water, and crush the potatoes, as in mashed potatoes. If you already have mashed potatoes, skip these manipulations. Add to mashed potatoes: egg, flour, salt, pepper and mix everything thoroughly. In mashed potatoes we drive an egg, add flour, salt, pepper and knead thoroughly. The potato mass for the zraz is ready, now let’s prepare the filling. Peel the onion, finely chop and start frying in a heated frying pan with sunflower oil. Cook over medium heat, stirring occasionally with a spoon.

Fry the onion and mushrooms. Peel the mushrooms, wash, dry a little, cut into slices and add to the onion. Salt, pepper and continue to fry together until lightly browned. Transfer the finished filling to a plate, trying to keep the oil in the pan. Roll the potato dough into a sausage and cut into equal pieces.

It’s time to sculpt zrazy! We form a sausage from the potato mass, roll in flour on all sides. On a plank sprinkled with flour, cut the sausage into circles about 1.5 cm thick. From the circles we will make cakes, in the middle of which we will lay out a little mushroom filling. Make sure that the filling does not fall on the edges of the circles – then it will be difficult to close up the fatty edges. Closed potatoes immediately put in a pan with heated oil.

We close up the zrazy, like dumplings, flatten a little and roll well in flour. Heat the sunflower oil and put the zrazy in a hot frying pan. Fry the potato zrazy with mushrooms until golden brown on both sides. Fry over medium heat for 2-3 minutes, until golden brown, then turn over with a fork to the other side and fry for a couple more minutes.

We remove the finished zrazy with a spatula on a dish. Serve hot potato zrazy with mushrooms, watering with sour cream.
