Provencal sauce for fish

2 egg yolks, 1-2 sugar cubes, 1 tsp. mustard, salt, 200 ml vegetable oil, 5-6 drops of vinegar

Grind hard-boiled egg yolks, sugar, 1 teaspoon of ready-made mustard, a little salt to a density and, while stirring, pour in 200 ml of vegetable (Provencal, olive) oil and 5-6 drops of vinegar. You can put a spoonful of capers (from nasturtium seeds) or tarragon into a creamy mass.
