Warm salad with lentils, chicken and broccoli
For the recipe you will need:
lentils – 125g
broccoli – 225g
garlic – 1 clove
English mustard (powder) – 1 tsp
balsamic vinegar – 2 tbsp.
olive oil – 4 tbsp.
onion (red) – 1 pc.
chicken breasts (smoked) – 350g
To prepare Warm Lentil, Chicken and Broccoli Salad:
Boil lentils. Finely chop the broccoli and boil in boiling water for 2 minutes. Drain, rinse and set aside.
Crush the garlic clove and place in a bowl. With a wooden spoon grind it with a pinch of salt until smooth, then add mustard, vinegar and 3 tbsp. l olive oil. Set aside.
Cut the onion. Heat the remaining oil in a frying pan and fry the onion for 5 minutes until soft.
Add chicken and broccoli and sauté, stirring occasionally, 1-2 minutes. Add lentils and dressing.
