Shrimp salad with mint sauce

Ingredients:

* Boiled peeled shrimp 10-20 pcs,
*avocado 1 piece,
* green peas 2 handfuls,
* celery stalk 1 piece,
* fresh basil 3 sprigs,
*chicken eggs 1pc,
* lemon juice 2 tbsp,
* mint 1 bunch,
*olive oil 150 ml,
* Dijon mustard 1 tsp,
* ground black pepper 1 pinch,
*salt 1 pinch.

Cooking method:

Step 1. Squeeze juice from half a lemon.

Step 2. Prepare mayonnaise. In a blender, combine mustard, egg, a pinch of salt, black pepper. Pour in olive oil in a small stream. After the mass thickens, pour in the lemon juice and a little more olive oil.

Step 3. Finely chop the mint and add to the mayonnaise. Mix.

Step 4. Finely chop the celery.

Step 5. Peel the avocado, cut into thin slices.

Step 6. Put on a plate: green peas, celery, shrimp, avocado, garnish with basil leaves and pour over mint mayonnaise.
