Sushi Roll with Smoked Eel and Cucumber

It is advisable to use special Japanese rice for making sushi (sold in stores). If you have not found a special one, you can use any round polished one. Rinse the rice in cold water, rubbing it in your hands and draining the water until the water runs clear. Add the amount of cold water indicated in the recipe to a saucepan with washed rice and put on medium heat, covered with a lid. Bring to a boil and reduce heat. Cook for 10 minutes, then leave the rice to sweat for at least 10 minutes. Do not open the lid of the pot while cooking rice – spoil it by releasing steam. Prepare a marinade for rice – dissolve salt and sugar in vinegar. You can heat the mixture for better dissolution. Put the finished rice in a wooden tub (this is an ideal container for cooked rice) or any non-metallic utensils. Pour the marinade over the top. Stir the rice with a wooden spatula, turning it gently so that it is completely soaked. At the same time, fan the rice, helping to cool faster. Body temperature is normal to start making a roll. Spread a bamboo napkin, put a sheet of seaweed with a shiny side down so that the edge of the sheet coincides at the beginning with the edge of the napkin. Wet your hands, take a small portion of the rice and spread it evenly over the surface of the nori, leaving a few centimeters at the end. Lay a pre-cut strip of peeled cucumber on rice in the middle across the mat, put sliced ​​(across the fillet) pieces of eel on top (if desired, you can apply a strip of mayonnaise on rice). Holding the napkin and the filling with the fingers of both hands, begin to roll it up together with the nori sheet, trying to press evenly. Continue to form a roll, but now you need to press harder to compact the rice. Remove the bamboo napkin and cut the roll in half on a cutting board with a sharp knife. Lay the halves side by side and simultaneously cut them into 3 or 4 pieces. Serve with soy sauce, wasabi and pickled ginger. The fillings of rolls can be varied endlessly.
