Picardian pancakes (French cuisine by Andrey)

4 slices of fried ham, 2 eggs, 300 g of mushrooms, 50 g of grated cheese, 300 g of flour, 0.5 liters of beer, 300 g of milk, 3 tbsp. spoons of sour cream, 110 g of butter, 1 tbsp. a spoonful of vegetable oil, 1 small piece of bacon, Salt, pepper
In a bowl, mix 250 g flour, 2 pinches of salt and beaten eggs. Dilute with beer. Add vegetable oil. Leave the mixture for 2 hours. During this time, prepare the bechamel sauce. Fry the peeled and chopped champignons in 40 g of oil over high heat for 3 minutes. Cut the ham, add it to the bechamel sauce along with the mushrooms and sprinkle with cheese. Make 20 thin pancakes, brushing the pan with lard each time. Put a little béchamel sauce on each pancake and twist into tubes. Spread them out on an oiled baking sheet. Top with sour cream. Place in an oven preheated to 260°C for 10 minutes. Serve hot. Preparation of bechamel sauce. Required: 40 g butter, 40 g flour, 0.5 liters of milk, 0.5 teaspoons of salt, a pinch of pepper. Melt butter in a small saucepan, add flour, mix everything. Immediately add milk, salt, pepper, mix thoroughly and, continuing to stir, bring to a boil. The sauce should be quite thick, so you can leave it for a few minutes on low heat until it thickens (do not forget to stir!).
