English Christmas Cake with Nuts and Dried Fruits

INGREDIENTS:
700 g dried fruits
350 g raisins, cranberries, currants and/or cherries
220 g butter
110 g chopped nuts
110 g brown sugar
110 g sugar
70 g ground almonds
3 eggs
2 cups of flour
1 orange
1 lemon
3 tbsp cognac / rum / brandy
1 tsp baking powder
1/4 tsp salt

COOKING:
1Cut the cherries into two halves, you can take frozen berries, beat the eggs (add one at a time) with oil into the foam, add cognac, brandy or rum, orange zest and juice, lemon zest, mix everything well, pour the mixture into a bowl with chopped dried fruits (курага, инжир, cherry, чернослив, сушеные ягоды, изюм и т.д.), орехами (фундук, грецкие орехи, орехи пекан или миндаля), фруктами в сахаре.
2Mix the sifted flour with baking powder and salt, gradually pour into the nut mass and knead the dough, turn on the oven to heat up.
3 Cover with oiled parchment a removable bottom of a form with a height of sides of 20 cm, lay out and level the dough, bake an English-style Christmas cake with nuts and dried fruits for 1 hour at 160 degrees, and then another 1.5 hours at 150 degrees.
4 Periodically check the readiness with a wooden toothpick; after the dough is ready, there should be practically no wet traces on it.
5Completely cool the cake, grease with cognac, rum or brandy using a brush, wrap in foil, decorate with whipped egg whites and sugar before serving, sprinkle with grated lemon and orange zest.
