Butterless Cherry Sponge Cake

Biscuit pies have one important advantage: even a novice and not too confident hostess can handle them. The dough is prepared in just a few minutes, the filling can be changed depending on the current season and your preferences. In addition, this cherry biscuit pie will help out a lot if you are going to bake something delicious, but the butter is over.
How to make a cherry biscuit pie

Ingredients:

Egg – 4 pcs.
Wheat flour – 170 g
Sugar – 140 g
Baking powder – one.5 tsp
Vanilla sugar – one.5 tbsp.
Milk – 60 ml
Vegetable oil – 50 ml
Cherry – 300 g approximately
Powdered sugar – 1 tbsp for filing
Butter – 1 tsp for the form

My cherries and peel them, let the juice drain, preferably on a sieve. Eggs need to be beaten with sugar (vanilla and regular) with a mixer or whisk until a fluffy foam is formed. If there is no vanilla sugar, then lemon zest or any extract to taste or whatever is at hand (for example, almond or vanilla) can be added to the cherry sponge cake dough.

Sift flour with baking powder and gradually, in portions, introduce into the dough, constantly mixing so that lumps do not form.

Pour in the milk, stirring well, then pour in the vegetable oil. Mix everything until you get a homogeneous, lump-free dough. However, it does not need to be whipped for too long. Instead of vegetable oil, you can use butter (if any), after melting it in the microwave.

We grease the form with oil and sprinkle a little flour, breadcrumbs or semolina. Cherries can be squeezed a little straight with your hand to drain excess juice. A too watery berry can even be rolled in flour, for this it is enough to lightly sprinkle the cherry on top and shake so that the berries are evenly covered with flour. We shift our dough into the prepared form, distribute the cherries on top.

Preheat the oven to 180 degrees. The cake will bake for about 30-40 minutes. Readiness will be checked traditionally – with a wooden skewer, if the cake is ready, it will remain dry. Then you can take the cake out of the oven and cool on a wire rack.

Before serving, it will be useful to sprinkle a sponge cake with cherries with powdered sugar.

A similar pie can be made with any other berries and fruits: currants, raspberries, blueberries, apricots, peaches, apples, pears, plums, grapes…
