TOP 5 cheese soups

1) CHEESE SOUP WITH CROUNT

Ingredients:

● 2 liters of water or stock
● 4 potatoes
● vermicelli
● processed cheese
● 20 gr butter
● salt, pepper – to taste
● spices (optional)
● bread
● greenery

Cooking:

1. Peel potatoes, cut into strips. Add to boiling water (broth) and cook until half done.
2. Cut the processed cheese into small pieces, add to the pan and mix well. When the cheese is melted, add the vermicelli, salt, pepper, butter and spices. Boil for another 10-15 minutes.
3. Cut the bread into small cubes and fry in butter until golden.
4. Pour the soup into bowls, add croutons and chopped greens.

2) CHEESE SOUP WITH MEATBALLS

Ingredients:

● 400-500 gr ground beef
● 1 egg
● 2 bulbs
● 1 carrot
● 3 processed cheeses 100 gr each
● 5-6 medium potatoes
● salt, spices
● bay leaf, herbs
● vegetable oil

Cooking:

1. Cut the onion into cubes and fry until golden brown in a small amount of vegetable oil.
2. Salt and pepper minced meat. Add 1 egg, half fried onion. Mix. Form meatballs.
3. Grate carrots. Fry in vegetable oil.
4. Add fried onions and carrots to a saucepan in water, salt. Bring to a boil.
5. Put the prepared meatballs into the soup. Meanwhile, peel the potatoes and cut into small pieces.
6. After 5-7 minutes, add potatoes to the soup. Add bay leaf, spices to taste.
7. Cut the curds into small cubes. Add the curds to the soup when the potatoes are ready. Mix well so that the curds dissolve.
8. After 3 minutes, add greens. Fragrant soup is ready.

3) CHEESE SOUP
(with champignons and broccoli)

Ingredients:

● Champignons – 5-7 pcs.
● Curds — 2 pcs.
● Broccoli – 200 g
● Potatoes – 1-2 pcs.
● Carrot — 1 pc.
● Salt, vegetable oil for frying

Cooking:

1. Cut the champignons. Fry for 5-10 minutes. Three carrots on a grater and also fry.
2. Broccoli is divided into inflorescences, into smaller pieces.
3. You can take fresh broccoli (in season), you can also use frozen.
4. In this case, thaw the broccoli slightly before preparing the cheese soup, otherwise it will be difficult to cut.
5. We cut potatoes. Add all the ingredients to boiling water, salt and cook in within 10 minutes.
We eat time rub cheese on a coarse grater. And add it to the soup.
6. Cook for another 5 minutes until the curds disperse. Sprinkle with dried dill (if desired) and let the soup simmer for a couple more minutes. Serve cheese soup with crackers or croutons.

4) Soup with cheese

Ingredients:

●2 tbsp. l. butter
●2 tbsp. l. wheat flour
●1 l of broth from any meat
●120 g unsweetened white wine
●800 g Dutch cheese
●2 pcs. chicken eggs
●3 Art. l. fat sour cream
●100 g parsley
●2 cloves of garlic
●salt
● ground pepper and nutmeg to taste

Cooking:

Put the butter in a saucepan and melt it. Add flour, mix well with butter. Add a little warm broth to the resulting mass.
Mix everything thoroughly again and add wine, chopped garlic and spices. After the soup boils, pour the grated cheese into it.
When the cheese begins to dissolve, you can remove the pan from the heat. In a separate bowl, mix egg yolks and sour cream. Add this ingredient to your soup.
Finely chop the parsley and also pour it into the finished soup. When serving, diced cheese is added to the plates.

5) Cheese soup with trout and mushrooms

Prepare a tender cheese soup with pieces of trout and mushrooms. A simple meal, not a soup!

Ingredients:

● 250 gr trout fillet
● 200 gr potatoes
● 100 gr carrots
● 80 gr onions
● 100 gr champignons
● 150 gr processed cheese
● 100 gr hard cheese
● 1 teaspoon starch
● 20 gr butter

Cooking:

1. Peel vegetables and mushrooms, cut into pieces. Boil water, add potatoes. Fry the onions, carrots and mushrooms in a pan with butter.
2. Add vegetables to potatoes. Boil them until the potatoes are done. Slice the melted cheese and add it along with the grated hard cheese to the soup. When the cheese is melted, salt, pepper, add dried celery and bay leaf.
3. Then cut the trout fillet into small pieces and add them to the soup, cook for 5 minutes. After dilute the starch with water and pour into the soup, mix.
4. Sprinkle with herbs, basil and cook for another 2 minutes.
