Hot bean salad
225 g canned white beans, 225 g canned yellow beans, 225 g canned red beans, 2 canned chili peppers, 3 garlic cloves, 2 red onions, 10 pitted olives, 100 g radishes, 725 ml wine vinegar, 6 tbsp. tablespoons of olive oil, 1 bay leaf, 0.5 teaspoon of dried basil, 0.5 teaspoon of dried oregano, ground black pepper, herbs, salt.

Vinegar, olive oil and 15 ml of water beat, add 2 cloves of garlic, bay leaf, dried herbs, lightly salt and pepper. Stir and bring to a boil. Add beans and simmer, stirring, 10 minutes. Remove from heat, remove bay leaf and garlic.

Cut olives into strips. Chop the remaining garlic. Combine, add beans, coarsely chopped radish, chopped onion rings and chopped chili peppers. Salt and pepper to taste, mix, garnish with herbs.

Serve the salad hot or warm.

Wine vinegar can be replaced with apple cider vinegar, red onion - with simple onions.

4 young onions, 0.5 fresh cucumbers, 3 carrots, 6 large tomatoes, 10 caps of young mushrooms, 3 stalks of celery, 1 sweet green pepper, 15–20 small cauliflower inflorescences, 15–20 pcs. radish, 1 tbsp. a spoonful of chopped watercress, 2 sprigs of cilantro or parsley, 1 tbsp. spoon of apple cider vinegar, 1 tbsp. spoonful of apple juice, 2 tbsp. tablespoons olive oil, lettuce, dry mustard, liquid sugar substitute, 0.5 teaspoon ground black pepper, 0.5 teaspoon salt.

Onion cut into thin rings. Peel the cucumber, cut lengthwise into 4 parts, remove the seeds, cut into cubes. Peel the carrots and cut thinly. Peel sweet pepper and cut into strips or cubes.

Cut the skin of each tomato crosswise in several places, then dip them in hot water for 30 seconds, then peel, cut into 4 pieces and remove the seeds. Cut mushrooms and celery into thin slices. Cut the radish into 4 pieces.

Combine the ingredients, add cauliflower, herbs and mix gently.

Prepare the dressing. Connect apple cider vinegar, apple juice, olive oil, some mustard and sugar substitute, pepper and salt. To stir thoroughly.

Line a salad bowl with lettuce leaves, put the vegetable mixture on them, sprinkle with watercress. Drizzle with dressing before serving.

You can use lemon juice instead of apple juice.

Ready salad can be used as an independent dish or as a side dish for chicken meat.

Salad with rice
100 g long-grain rice, 50 g white sultanas, grains 2 boiled corn cobs, 175 g bean sprouts, 1 garlic clove, 25 g chopped almonds, 1 young onion, 50 g chopped lettuce, 1 tbsp. spoon of sesame oil, 2 tbsp. spoons of apple cider vinegar, 3 tbsp. spoons of apple juice, 250 ml of water, ground black pepper, red ground pepper, salt.

Salt the water, add black and red pepper to taste, add rice and mix thoroughly. Bring to a boil over high heat, reduce it to low, cover the pot with a lid and simmer for about half an hour until the rice softens. Remove pan from heat, add corn, bean sprouts and almonds.

Mix.

Citrus salad with mint
2 grapefruits, 3 oranges, 8 sprigs of fresh mint, liquid sugar substitute.

Peel grapefruits and oranges from the skin and white layer, disassemble into slices, peel them from the films. Squeeze out the films, add a little sugar substitute to the resulting juice. Finely chop half the mint, add to the mixture and mix.

On four flat bowls or dessert plates, lay out circles of alternating orange and grapefruit slices. Pour in a mixture of juice and mint, garnish with mint sprigs, refrigerate.

Chinese cabbage salad
350 g Beijing cabbage, 125 g black grapes, 200 g lean smoked meat, 3 oranges, 1 grapefruit, 3 tbsp. tablespoons low-fat mayonnaise, 150 g low-fat natural yogurt, 1 tbsp. a spoonful of cognac, ground black pepper, salt.

Beijing cabbage can be replaced with white or red cabbage.

apple salad
2 large green apples, 1 bunch of lettuce, 150 g of chopped walnut kernels, 15 g of parsley, 100 g of grated low-fat cheese.

For dressing: 2 tbsp. spoons of light rum, 1 tbsp. spoon of vinegar, 2 tbsp. spoons of honey, 1 tbsp. spoon of mustard, 0.25 cups of olive oil, 1 teaspoon of lemon juice.

Wash apples, dry, cut into slices. Wash lettuce, dry, tear into small pieces. Finely chop the parsley.

banana salad

Combine bananas with cereal, ham and raisins, pour over a mixture of cream, lemon juice and grated lemon zest, mix and let it brew for half an hour.

Line a salad bowl with lettuce leaves, put the mixture on it, cool slightly.

First meal
Sweet pepper and zucchini soup
700 ml of vegetable broth, 250 g of zucchini, 2 pods of sweet red pepper, 2 pods of sweet green pepper, 1 large onion, 2 cloves of garlic, 1 tbsp. tablespoon olive oil, 1 teaspoon apple cider vinegar, 0.5 teaspoon ground red pepper, 0.5 teaspoon ground black pepper, 1 teaspoon sea salt, basil.

Finely chop the onion. Wash sweet pepper, dry, remove seeds and partitions and cut into thin strips or cubes. Remove the skin from the zucchini and cut into thin slices. Finely chop or grate the garlic.

Heat the olive oil and, stirring, fry the onion in it until it becomes soft. Add garlic and sauté, stirring, for 5 minutes.

Pour onion and garlic with broth, put pepper and zucchini, mix, bring to a boil. Cover the pot with a lid and cook, stirring occasionally, for 20 minutes. Salt, pepper, pour in vinegar, mix.

Pour the finished soup into bowls, sprinkle with fresh finely chopped basil.

Zucchini can be replaced with mushrooms, onions with leeks, basil with cilantro or parsley.

Cut the onion into half rings and fry in hot olive oil. Add coarsely chopped garlic, stir and fry for another 1 minute.

Peel sweet peppers from seeds and partitions, cut into cubes, combine with garlic and onions, cover the dishes with a lid and simmer for 5 minutes, stirring several times during cooking.
